One great strategy if you don’t have adequate protection (i.e a fallen tree, rock ledge, etc.), is to crouch with your weapon (I recommend rifle, but lvl 5 bow works well too) and shoot it from a decent distance. I killed one with 3 rifle shots at lvl 1.
