I had a similar situation. I shot a bear, saw blood and got an increase to my rifle skill and then hid like a baby in a house, checking every once in a while on my stats if the thing was dead. It never did and then it nearly killed me a few in-game days later when I was coming back from coastal highway. Now I have a personal vendetta against the thing.
