On the same Pilgrim sandbox play-through I have so far taken 3 Moose. The first right outside Trapper’s Homestead at Mystery Lake, the second one near the Hunting Lodge at Broken Railroad and the third at Marsh Ridge at Forlorn Muskeg.

They charged at me when fired upon, so I hope this answers questions about whether they attack on the Pilgrim difficulty level. However that was provoked by me shooting at them. I have managed to avoid getting trampled thus far.
